As we all know having just meat for dinner is not a balanced meal. I will admit that there have been days that I have fried up a steak late at night and just chowed down lol.
For dinner tonight I decided to have a tantalizing salad along with my Chargrilled Rib Steak. Greek salad ingredients seemed like the right choice and why not add a natural homemade salad dressing to accompany all those crisp fresh vegetables.
Why is this Greek Style Salad
Whereas in a traditional Greek salad olives are included and iceberg lettuce is not, I have decided to omit the olives as the feta cheese is more than enough to give the salad a bit of a salty brine. I made the choice to input iceberg lettuce because I wanted more of a full salad feeling.
Original Greek Salad doesn't include lettuce. It is made with vegetables such as green peppers, cucumbers, red onion, tomatoes, olives, and feta cheese. The dressing is usually olive oil, oregano, salt, pepper, and red wine vinegar. The dressing I made is similar as it includes olive oil and oregano but I added more flavors to make it my own. Â
Who created the Greek Salad?
Greek Salad was first introduced by Hippocrates. He believed eating raw vegetables before a meal would help aid digestion. Of course, he was right and now salads are a very large part of our diet. Â

Chopping Time

Wash vegetables
Wash all your vegetables in cold water. This will help keep everything crisp and bright in color. Ensure you also wash the celery leaves as they are also included in the salad. Celery leaves are edible and very tasty.

Chopping Time
Cut and dice up your vegetables to the size you like and mix together in a bowl. They don't all have to be the same uniform size. Â

Assemble Salad
Drizzle Sundried Tomato and Herb Dressing and then add cubed Feta Cheese. Enjoy!
This salad will be able to serve 2 portions. If you really love your veg this could also make 1 big salad.
Sundried Tomato and Herb Dressing

Finely chop herbs and sundried tomatoes. I chose oregano, lemon thyme and rosemary out of my herb garden. Not everyone has a herb garden though so your local grocery store probably has a good variety of fresh herbs.

Place chopped tomatoes and herbs in a jar or container that has a lid. Add remaining ingredients: mustard, olive oil, lemon juice, vinegar, and the oil from the sundried tomatoes jar.

Place lid tightly on jar and Shake, Shake, Shake

Drizzle over salad and enjoy.
