This soup is called Old School Tomato Macaroni Soup because it is a soup that was popular in the childhood days of the baby boomers.   Baby boomers are us children that were born in the 60’s and 70’s and were teens in the 80’s.  Anything we did during those years some of us refer to it as the old school days.  Cooking recipes with Campbells soup was very popular during those years. Both parents were going into the work force and quick meals were a must.  I remember my parents making this soup in my younger years and I always enjoyed it.  It was many years later that I was reminded of this recipe.  I was visiting a friend.  It was her comfort food when she was hungover.  I had some with her and it just reminded me of my early years.  I started making it myself for a quick meal for my family.   It had been years since I had made it.  Recently we were a little low on groceries and I needed to make an easy quick meal that I could use pantry ingredients I had on hand.  I had macaroni and Campbell’s tomato soup and then the light bulb went off in my head of this old school classic recipe. My household members are from the Caribbean and have never had recipes cooked with Campbell’s soup products.  I wasn’t sure if they would like it.  As they watched me make it, they were a bit hesitant.  I promised them that I could make us a delicious filling meal on a cheap budget, and it would taste fantastic.  Sure enough, once it was done and I served it, they loved it.  I now make it even on days when we have a lot of groceries.  It has become a favorite quick meal for us.

Do I have to use Campbell’s Tomato soup?

This recipe can be made with any brand of canned tomato soup.  My preference is Campbell’s.  I find that it is smoother and creamier than the cheaper brands.  Use whatever brand your budget allows.  I am sure it will still taste fantastic. 

This soup can also be made from scratch.  Using fresh tomatoes.  It would take quite a bit more effort and energy and time.  Nothing beats fresh but the reason for this recipe is the convenience of making it fast and easy, which the premade canned soup allows. 

What about sodium levels.

Yes, canned products have sodium.  This is not a dish to make too often.  Campbell’s Company did change the recipe for their condensed tomato soup in 2009.  It decreased the sodium by approximately 32 %.  I found that it did change the taste of the soup from the original recipe a bit.  Many companies now try to use lower sodium content in their canned soup recipes.  Most daily allowances for sodium for the average person should be only 2300mg.  If you have heart disease, your sodium intake can only be 1300 mg per day.  This recipe for Tomato Macaroni Soup has 299mg of sodium.  You will have to ensure that the rest of your meals and snacks have low or no sodium.  I don’t add salt to this recipe. 

Fast and easy to prepare. 

This recipe is so fast and easy to make.  I start by boiling some macaroni in a pot.  While the macaroni is cooking, I cut up the vegetables that I will be adding to the soup such as onions (green and yellow), garlic, and celery and bell peppers.  Once macaroni is cooked to al dente, I drain it and set aside.  I then stir fry the vegetables and then add the can of soup and a can of water.  I add the macaroni and let it simmer for a while.  I also add cream to this recipe, but that is optional.  I found the soup to be a bit too salty still, so I also have added a little bit more water to thin out the liquid and reduce the sodium.  That is all it takes.  Dinner is ready in less than 15 minutes. Old School tomato macaroni soup is a comfort to eat.  I am sure you will enjoy this recipe. 

Ingredients you will need to make this simple easy soup
  • 1 can Tomato Soup
  • 1/2 c Dried Macaroni
  • 1 can Water
  • 2 Stalks of Celery
  • 1/2 medium yellow onion
  • 2 clove garlic
  • 1/2 Green Bell Pepper
  • 2 green onion stalks
Instructions
  1. Gather your ingredients

    Gather the ingredients that are in this recipe.  It will make the time to make this recipe even faster.  

  2. Prepare Macaroni

    Bring a pot of water to a boil.  Once water is boiling, add 1/2 cup of macaroni.  Cook the macaroni until it is al dente.  Drain and set aside in a dish to add to soup later.

  3. Prepare vegetables

    Chop all of vegetables.  Celery, Bell Pepper, green onion, yellow onion and garlic.  

  4. Saute vegetables

    Heat butter or oil in a pot.  Sauté onion, celery and bell peppers first.  Once they are translucent add garlic and green onions.  Continue to sauté'  until all vegetables are cooked.  

  5. Start making soup broth

    Add the can of condensed tomato soup and one can of water into the pot with the cooked vegetables.  Stir and keep at medium heat

  6. Add Macaroni

    Once the soup has come to a simmering boil add macaroni.

  7. Optional Step

    I like to add a little bit of cream to my tomato soup.  So if you want the soup to be a bit creamier add some cream.  I also add a little more water at this time if I find that the soup tastes strongly of salt.  

     

  8. Bring all the flavors together

    Now all of the ingredients are in the pot let everything simmer for about 5 minutes.  This will bring all the flavors together.  It is now ready to serve and enjoy
